What is the best cooking oil so the food does not burn.?

The last time I used fried foods and canola oil food becomes too brown. It was the heat. Crisco is best to use. I know I've used Crisco several years ago. I want to make Fry Bread and Indian children do not eat if it seems too dark. Olive oil is my favorite but good for feeding fry in Thanks.
